Ratatouille is one of those super easy dishes that doesn’t really have a recipe. It is one of those recipes that is good for using up any veggies in the fridge, and as long as you chop up the vegetables into even pieces, it is hard to mess up.

Ingredients:

1 small eggplant
1 tomato
3 carrots
1 onion
1/2 fennel bulb
1 can crushed tomatoes
1 can white kidney beans
Dried basil
Dill weed
Olive oil
Red wine

Method:

Chop up all the vegetables in to even pieces and place in a large pot. Put the can of tomatoes and can of beans in the pot as well. Pour in the olive oil and wine, I don’t really measure but put in enough to cover the vegetables. Add the dried spices, as much as you would like, since again I don’t really measure that either. As you can probably tell I am not really the kind of cook that measures, I cook by feel and experience instead. Put the lid on the pot, and simmer for an hour, or until the vegetables are cooked. Don’t stir the veggies as that will make them turn to mush, which is not what you want, you want the vegetables to stay intact.

Enjoy by itself, over a cooked grain such as brown rice or quinoa, or with a nice piece of whole grain bread.
